Cornbread
1 1/4 cups all-purpose flour
3/4 cup corn meal
1/4 cup sugar
2 teaspoons Baking powder
1/2teaspoon salt (optional)
1 cup milk
1/4 cup vegetable oil
2 eggs beaten
Heat oven to 400°, grease 8 or 9-inch pan. I like to use a cast iron skillet.
Combine all the dry ingredients, stir in milk, oil and eggs. Mix and pour batter
into prepared pan. Bake until light golden brown, 20 to 25 minutes. Test the center
with a wooden toothpick, if it comes out clean, remove from oven and serve warm.
Yields about 9 servings.
